We run live biryani stations at weddings across Mexico, serving directly from clay handi pots that are sealed at the venue and opened at service.

The Biryanis We Cook

Hyderabadi chicken biryani (the gold standard — long-grain basmati, marinated chicken, fried onions, mint, kewra water), Lucknowi mutton biryani (Awadhi style, slow-cooked with whole spices and saffron), vegetable biryani, paneer biryani, kashmiri biryani with dried fruits, prawn biryani, fish biryani. All served with raita, salan and pickle.

The Live Handi Setup

Biryani is layered into clay handi pots, sealed with dough and slow-cooked. The handis are brought to the station sealed, opened in front of guests at service — the burst of steam, the aroma, the visual of the chef breaking the dough seal. This is the most photographed moment of any biryani station. We can run multiple handis simultaneously for larger guest counts.

Buffet biryani sits in chafing dishes and dries out by the second hour. Station biryani is served fresh from the pot to the plate — every guest gets it hot, fluffy, with full aroma. For weddings with 200+ guests, two biryani stations (one veg, one non-veg) keep service moving without queues. We pair the biryani station with the live tandoor for a full-action food experience.
