Chaat Station Wedding Catering — The Crowd-Pleaser
There is no faster way to make Indian wedding guests happy than a well-run chaat station. It is interactive, instantly recognizable, eaten with hands and brings back childhood memories for nearly every Indian guest. We run authentic chaat counters at weddings across Mexico with traditional preparation, three-water pani puri, and chefs who do this work every day.
The Full Chaat Menu
Pani puri (sweet, spicy and jeera waters separately), sev puri, papdi chaat, dahi puri, bhel puri, aloo tikki chaat, samosa chaat, ragda pattice, dahi vada, dabeli, ragda samosa, tikki ragda, pav bhaji. We do not pre-assemble — each plate is built per order so the puris stay crisp and the layering works.
The Three-Water Pani Puri Setup
Authentic pani puri needs three different waters: sweet (tamarind-jaggery), spicy (mint-coriander-green chili), and jeera (cumin-asafoetida). We serve these in separate copper bowls so guests can mix and match. The pani puris themselves are deep-fried fresh on-site — never pre-fried and bagged. The crunch is the difference between authentic and fake pani puri.
When and Where to Place the Chaat Station
Cocktail hour and pre-dinner positioning works best — a chaat station opened too late in the night gets less foot traffic. For sangeets and mehndis where the dance floor and the food share space, we set up the chaat counter near the bar so guests grab chaat with their drinks. For larger receptions (300+ guests), two chaat counters in different parts of the venue keep lines short.
