For plated service: amuse-bouche (chaat shot or paneer canapé), starter (soup or kebab platter), main course (curry duo with rice and bread), dessert (mithai trio with kulfi). For buffet: 6-8 starters, 8-12 main courses split across veg/non-veg, 4 rice/bread options, 6+ desserts, full chaat and tandoor stations. For station-based: 6-8 live stations rotated through the night.
