Vegan Indian food can be spectacular — South Indian and Maharashtrian cuisines are largely vegan by default, and most North Indian gravies translate beautifully when paneer becomes tofu, ghee becomes coconut oil and cream becomes cashew. Naturally Vegan Indian Dishes
Most South Indian food is already vegan: idli, dosa, sambar, rasam, coconut chutney, lemon rice, coconut rice. Plus chana masala, chole, rajma, dal tadka (no ghee finish), vegetable biryani, pulao, aloo gobi, baingan bharta, bhindi masala, mixed vegetable curry. From the tandoor: tandoori vegetables, mushroom tikka, soya chaap. We do not need to make anything "vegan" — these are authentic dishes.
Smart Substitutions for the North Indian Classics
Butter chicken becomes butter tofu or butter cauliflower with cashew-tomato gravy and coconut cream. Paneer tikka becomes tofu tikka or soya chaap tikka. Dal makhani is finished with cashew cream instead of dairy cream. Gulab jamun is made with khoa from cashew or oat. Done right, even strict non-vegan Indian guests do not notice the swap.
Vegan Sweets & Desserts
Coconut barfi, kaju katli (with vegan ghee), gajar halwa with coconut milk, kheer made with almond or oat milk, laddoo from chana dal and jaggery, jalebi (naturally vegan), payasam with coconut milk. We can do a full mithai bar with a vegan-only section, or a 100% vegan bar if your entire dessert table is plant-based.
