Multi-Day Indian Wedding Catering — One Vendor, Full Week
Indian destination weddings in Mexico typically run 4-6 days: welcome dinner, mehndi, haldi, sangeet, ceremony, reception, farewell brunch. Coordinating multiple caterers across these events is a logistics nightmare. Aroma Curry handles the full sequence as a single vendor — one contract, one point of coordination, menus that complement instead of repeat.
The Full Week, Coordinated
Day 1 (welcome): light Indian-Mexican fusion dinner. Day 2 (mehndi): chaat-and-lassi-forward vegetarian menu. Day 3 (haldi morning + sangeet night): yellow-themed brunch and full live-station dinner with late-night refuel. Day 4 (ceremony + reception): traditional ceremony lunch and premium reception dinner. Day 5 (farewell brunch): South Indian dosa station and Indian-Mexican breakfast bites. Each event has its own personality — no menu repetition.
Why Single-Vendor Coordination Saves You
Multi-vendor catering across a week creates problems: dishes get repeated, dietary tracking becomes inconsistent, kitchen logistics conflict, equipment is duplicated, billing fragments. With one vendor, the menu architecture is planned across all events, dietary preferences track from day 1 to day 6, kitchen and equipment are amortized, and you have one point of contact for any change.
On-Site Setup for Multi-Day Events
For 4+ day events, we typically set up an on-site temporary kitchen near the venue with our tandoor, prep stations, refrigeration and cooking equipment. This stays in place for the entire week. Our chef team and service staff travel and stay nearby. This is the model that works at remote luxury venues — the haciendas, cliffside villas and beach resorts where wedding parties book out the property.
